BOXTY

Boxty on the griddle, boxty in the pan, If you can't make boxty, you'll never get your man.

The lighting of candles in Ireland also has a religious significance. Some people would light candles to signify symbolic hospitality for Mary and Joseph. The candle was a way of saying there was room for Jesus' parents in these homes even if there was none in Bethlehem. Some people even set extra places at their tables as a preparation for unexpected visitors. And what better to serve than that famed northern potato dish, BOXTY?

• 8 oz / 250 g / 1 cup raw potato;
• 8 oz / 250 g / 1 cup mashed potato;
• 8 oz / 250 g / 2 cups plain flour;
• 1 tsp baking powder;
• 1 tsp salt;
• large knob of butter, melted;
• about 1/4 pt / 125 ml / 1/2 cup milk

Grate the raw potatoes into a bowl. Turn out onto a cloth and wring, catching the liquid. This will separate into a clear fluid with starch at the bottom. Pour off the fluid and scrape out the starch and mix with the grated and mashed potatoes. Sieve the dry ingredients and mix in along with the melted butter. Add a little milk if necessary to make a pliable dough. Knead lightly on a floured surface. Divide into four and form large, flat cakes. Mark each into quarters but do not cut right through, and bake on a griddle or in a heavy pan. If liked, more milk and an egg can be added to make a batter which can be fried in bacon fat.


IRISH POTATO OAT CAKES

Here is a recipe for IRISH POTATO OAT CAKES, combining both aspects of the rural Irish diet:

INGREDIENTS

• 1 Ib (450g) of cooked Potatoes
• 2 oz (60g) of Margarine/Butter
• Half lb (225g) of fine Oatmeal
• Salt and freshly ground Pepper
• 2 Tablespoon of Milk

INSTRUCTIONS

1. Mash the potatoes and season to taste with salt and pepper, adding some milk to make it soft and fluffy

2. Add the oatmeal and mix, cover to keep the potatoes warm

3. Add the Margarine to a saucepan and heat until melted. Add the melted margarine to the mixture and mix to make a stiff dough

4. Lightly sprinkle some oatmeal on a board and roll out dough to approx. a quarter inch thick. Cut into triangles

5. Fry in hot fat until both sides are golden brown


POTATO AND LEEK SOUP

• 750 g cubed potatoes
• 2 leeks thinly sliced
• 3 medium onions diced
• 2 T of oats
• 60g butter
• 2 cloves of garlic crushed
• 2 cups chicken stock
• 2 cups milk
• ground pepper
• ground nutmeg

Melt butter in large pan, cook onions and leeks for 3 minutes. Add potatoes and continue to cook until potatoes are golden brown. Stir in the oats and cook for 1 minute. Add garlic and cook for another minute. Reduce heat and stir in chicken stock and milk. Heat over low flame for 30 minutes, or until vegetables are tender and soup begins to thicken. Season to taste. Just before serving soup may be garnished with a teaspoon of whipped cream and chopped chives.


Irish Potato Farls

Ingredients

  • 1 1/4 pounds potatoes - about 4 medium potatoes
  • 2 teaspoons melted butter
  • 1 cup of flour
  • 1/2 teaspoon salt
  • 4 teaspoons of vegetable or canola oil
  • Directions

    Peel and half the potatoes and boil in water for 20 minutes or so until soft. Drain and then add the butter and mash thoroughly. Add the flour and salt and mix. Divide the mixture in half and put the first half on a lightly floured surface. Knead until flat - approximately 1/4 inch thick. Divide into 4. Repeat the process for the other half of the mixture. Fry or Griddle using the oil for about 2 minutes or until crispy brown on each side. Serve warm.

    This Irish potato recipe makes about 8 Potato Farls.


    Colcannon: Mashed Irish Potato Recipe

    Ingredients

  • 2 cups mashed potatoes (a great way to use leftovers)
  • 2 cups green cabbage, shredded
  • 1/4 cup green onions, sliced
  • Pepper to taste
  • Butter and Parsley for topping
  • Directions

    Steam or boil shredded cabbage until tender.
    Drain cabbage and fold into prepared mashed potatoes.
    Add onions and season with pepper.
    Dot with butter and sprinkle with parsley.
    Serves 4


    Irish Potato Casserole


    Ingredients
  • 1 1/2 pounds (4 to 5 medium) potatoes, peeled and squared
  • 1/2 teaspoon salt
  • 3 tablespoons butter or margarine
  • 2 tablespoons flour
  • Salt and pepper
  • 2 cups milk
  • 2 hard-boiled eggs, peeled and sliced thin
  • 2 tablespoons chopped onions
  • 3 tablespoons bread crumbs

  • Directions

    Preheat oven to 350 degrees Fahrenheit
    Place potatoes in large saucepan. Cover with cold water. Add 1/2 teaspoon salt and bring to a boil. Reduce heat to low and cook 20 to 25 minutes or until potatoes are tender. Drain. Put Aside.
    Melt 2 tablespoons butter in medium saucepan. Add flour, salt, and pepper; cook to a slight boil. Add milk; stir well. Cook, stirring constantly, until thickened.

    Combine potatoes, hard-boiled eggs, onion, salt, and pepper in lightly greased 1 1/2 quart casserole dish. Add white sauce; blend lightly with spatula. Melt remaining 1 tablespoon butter. Add bread crumbs; mix well. Sprinkle buttered crumbs over casserole. Bake for 30 minutes.
    This makes 4 servings.
